YIELD: 2 servings
PREP TIME: 10 mins
COOK TIME: 4 hours
TOTAL TIME: 4 hours & 10 mins
INGREDIENTS
1 medium ripe banana, mashed
1 1/4 cups almond milk (or milk of choice)
1/2 cup nonfat vanilla or plain greek yogurt (dairy free yogurt also works)
1 cup gluten free rolled oats
1 tablespoon chia seeds
10 strawberries, diced
2 tablespoons almond butter
INSTRUCTIONS
Add mashed banana, almond milk and greek yogurt to a medium bowl and stir until well combined and creamy.
Stir in oats, chia seeds and strawberries. Divide evenly into two mason jars or plastic containers, then cover and place in fridge overnight.
Once ready to serve, top each overnight oats serving with 1 tablespoon of almond butter and a few extra banana slices & strawberries, if desired. If you like crunch, add chia seeds and even some of my healthy chunky homemade granola on top!
NOTES
Customize your overnight oats by adding in different mix-ins to your liking such as: flaxseed meal, hemp seeds, blueberries, homemade granola, sliced almonds, the list goes on and on.
Store overnight oats in an airtight container or mason jar for up to 5 days.
We prefer ours warm however eating them cold is fine too!
