Spring Inspired Herb Salad Recipe: White Bean Salad with Herb Dressing

Spring is here — hello fresh herbs and green thumbs! Even if it's only a few pots in the kitchen for herbs, we welcome that too. This week we are sharing one of our favorite quick and healthy recipes from Alexandra's Occasionally Eggs. We enjoy her simple, vegetarian-minded and fresh locally-sourced recipes. This vegan white bean salad is packed full of spring greens, protein rich beans and add-in naan, it feels like a full meal. White Bean Salad with Herb Dressing


Quick, filling, and super healthy, this is a great salad to make ahead of time for work lunches or as

a weeknight dinner idea.

YIELD: 4 servings

PREP TIME: 10 mins

COOK TIME: 20 mins

TOTAL TIME: 30 mins


INGREDIENTS

  • 6 shallots quartered lengthwise

  • ½ teaspoon olive oil

  • ¼ teaspoon sea salt

  • 2 cups small white beans cooked

  • 1 batch Lemon Herb Vinaigrette

  • 3 cups rucola or other greens

  • naan

Lemon Herb Vinaigrette

  • ¼ cup olive oil

  • ½ cup mint

  • ½ cup cilantro

  • 1 clove garlic peeled

  • Zest 1 lemon

  • Juice 1 lemon

  • 1-2 teaspoons white wine vinegar to taste (optional)*

  • ½ teaspoon sumac**

  • ½ teaspoon sea salt to taste

  • ½ teaspoon pepper


INSTRUCTIONS

  • Preheat your oven to 180°C (350°F). Place the shallots cut side up on a baking sheet, topped with the olive oil and salt. Roast for about 20 minutes, until cooked through and slightly crispy.

  • Place the beans in a medium bowl and stir in the herb vinaigrette until the beans are fully coated.

  • To assemble the salad, add a handful of the greens to the bottom of each bowl, then top with 1/4 of the beans and shallots. Add a piece of naan to each bowl and serve.

Lemon Herb Vinaigrette

  • Place all of the ingredients into a tall container and blend on high with an immersion blender until smooth. Alternatively, use a small standing blender or food processor.

NOTES

  • If you can't find or don't have sumac, leave it out. It adds an additional citrus flavor.
